I love experimenting with pesto and different flavours you can add to it. I’ve made so many combinations but this raw spinach pesto recipe is one of my favourites. It’s so quick and easy to make and doesn’t require and cooking!! Serve it with some cooked brown rice pasta or dip your raw veggies into it =) Either way your in for a treat!

How to Make Raw Vegan Parmesan:

-2 cups raw spinach
-1/4 cup extra virgin olive oil
-1 cup of diced cherry tomatoes
-Small handful of fresh raw basil
-Handful of walnuts (about 1/2 cup)
-1/2 lemon squeezed
-2-3 cloves of garlic
-Fresh ground pepper
-Sprinkle of raw vegan parmesan (recipe video is linked above)

*Blend all up in a food processor until you’ve reached your desired texture. Serve on cooked brown rice pasta, raw veggies or dip your crackers in it!
